Pairing
CM is an excellent wine for any pairing. We suggest pairing it with any kind of beans, meats, stews and roasts. It can be drunk alone before meals, with appetisers, cured meats, cheese and white and oily fish.

Qualified Designation of origin Rioja
CM is a red wine of the Tempranillo grape variety from DOCa Rioja, grown in our own vineyards, which are 30 to 80 years old and are located in the highest area of Sonsierra. These plots are very close to Bodega Carlos Moro and are named Gallomate, San Martín and La Rad, located at an altitude of 610 metres, in mature clay-textured soils.
The town of San Vicente de la Sonsierra, known for its traditional Holy Week 'picados' penance procession, is one of the most outstanding and internationally-acclaimed wine-making regions. It is located to the north-west of La Rioja and borders with Álava along the Sierra Cantabria mountain range. Its soils and its distinctive climate are largely responsible for the quality of its wines, as the mountain range causes the 'Foehn' effect that protects the vineyards from the cold northerly winds that gather moisture as they arrive from the Cantabrian Sea.
The grapes used to make this wine have been selected and harvested by hand in 10-kg crates. They undergo malolactic fermentation in concrete tanks and then stand in French (65%) and American (35%) oak barrels for 12 months.
DESCRIPTION
The vineyard
Chalky, fresh soils of San Vicente de la Sonsierra, plots named Gallomate, San Martín and La Rad. 30 to 80-year-old goblet-trained vineyards with limited production and small-sized grapes. Unique low-mountain soil, excellent for an austere vineyard in a virtually mountain climate.
The wine
It is a cherry red wine with bluish nuances, a sign of its good evolution.
Its aroma is very intense and clean on the nose. It is a mature and sincere wine which immediately displays its aromas of fresh berries in the range of strawberries, cherries and blackberries. It features background aromatic plant aromas, such as thyme and lavender, and underlying spicy and aromatic notes.
On the palate, it is ample, with great volume, fresh and with a very marked acidity. Its delicate structure makes it easy to drink, but also strong and intense in all the tasting stages.
