Cyan Pago de la Calera 2004
Designation of Origin Toro
Cyan Pago de la Calera (Designation of Origin Toro) is a red author wine that reflects the values and prestige not only of the DO Toro, but also of its maker, Carlos Moro, who has chosen this vineyard to convey the best terroir expression. An exquisite winemaking process, a meticulous selection of the Toro red wine grape and a long maturation for more than 24 months in Bordeaux and Burgundian barrels made of fine-grained medium-toasted French oak turn this wine into a flagship of the Toro red wine.
It comes from old vineyards in the hamlet of the same name, located in limestone areas of the DO Toro. The goblet-trained vines that are more than 60 years old provide maturity and personality to a wine made from a rigorous selection of small grapes harvested manually, always respecting both the terroir and the 100% Toro red wine variety.
After its alcoholic fermentation, it matures for 24 months in new French oak barrels and for other 48 months in the bottle to finish polishing its essence.
In the visual phase, Cyan Pago de la Calera has a very intense dark black cherry colour with a purplish edging.
The nose offers great complexity. Ripe black fruit and aromatic plants among spices, pipe tobacco, cocoa and mineral notes derived from its maturation in oak barrels.
In the mouth is dense, fat and intense, displays balsamic hints as well as mineral and spicy nuances that blend with the flavours of tobacco and chocolates arising from long maturation in new oak barrels.
It pairs perfectly with cured cheese and meats, including Iberian ones. It also pairs with game and red meats.
