Designation of Origin Toro

Cyan Roble is an organic red wine from the Designation of Origin Toro made from the Toro red wine variety. We wait for the best harvest moment, looking for freshness and balance with delicacy and personality. After fermentation, this wine is matured for 8 months in new French oak barrels, giving more personality to this fresh Toro wine.

The Cyan Roble label features a native bird named Cyanopica. This small bird, which has an attractive blue plumage, is typical of the Toro area and is only found in these places of unique natural wealth. Cyan Winery respects nature deeply and carries out ecological or organic agriculture, harvesting grapes mechanically and using only natural products on the vineyard.

The vineyard

This red wine comes from vineyards on sandy soils with a limestone base at Finca de La Calera, located in Valdefinjas, in the west end of the DO Toro, a land of wines with great power, structure and maturity. No chemical fertilisers, pesticides, herbicides, or fungicides are used for growing these vineyards. 

The wine

In the visual phase, this wine reveals a very bright and dark blackberry colour on a bluish background that denotes its youth and moderate maturation in barrels.

The nose shows a lively and expressive wine with fresh red fruit aromas of blackberry, currant and myrtle, elegant tertiary aromas derived from its maturation in oak, as well as aromas of finely roasted coffee, lactones and liquorice stick. In the mouth it displays a fresh acidity that enhances red fruit aromas as well as notes of toasted bread and roasted coffee, providing a long, fresh and very pleasant finish.

Pairing

This organic red wine pairs perfectly with any kind of cured meats, as well as with soups, stews, poultry, rice, mushrooms and Castilian cocido.
